In collaboration with local brand Two Stacks, Killeavy Castle Estate launches its own exclusive Estate whiskeys and unique Whiskey Tasting Experience.
Killeavy Castle Estate opened its doors in April 2019 and has since embarked on a journey of continuous development, launching its two Estate restaurants, three self-catering residences, a boutique thermal spa and an ambitious tree planting project that has seen over 25,000 native broadleaf trees planted on the slopes of Slieve Gullion, creating a biodiversity corridor running from the Estate through to the Slieve Gullion Forest Park.
Killeavy Castle Estate prides itself on the authentic and unique experiences that guests can avail of on the Estate and the most recent development is a Signature Whiskey Tasting experience. During a tasting, guests will hear stories of the Estate’s rich history, how the collaboration with Two Stacks unfolded and sample the Estate’s two exclusive whiskeys. The whiskey is thoughtfully paired with a tasting plate of carefully curated bites from the Estate’s farm-to-fork kitchen, designed to perfectly complement and elevate the whiskey tasting experience.
Speaking about the recent launch, Shane McCarthy, Founder of Two Stacks Whiskey says:
"This release with Killeavy Castle is something close to home, a genuine partnership between two Co.Armagh brands that care deeply about place, heritage, and doing things with purpose. It's a whiskey that reflects that bond; bold, honest, and rooted in the land it comes from. The 6 Year Old Irish Pot Still has taken beautifully to its triple sherry maturation and Australian Apera finish, a nod to both the Boyles' connection to Australia and our own approach to cask innovation. Offering it in both Cut and Cask strength bottlings, gives people a real choice in how they experience it, no filters, no shortcuts. It's also been a privelge to help bring the new whiskey room, 'The Corn Store' at Killeavy Castle to life, a space that reflects the same depth and care we've tried to put in the glass. We're proud to be the only Irish whiskey bonder in the county of Armagh, and even prouder to do it alongside a team like Killeavy."
The Whiskey Tasting Experience at Killeavy Castle Estate will take place in the newly renovated ‘The Corn Store’. What was once a storeroom for grain and seed in the Old Mill building, now invites you to step into a luxurious tasting library, where the old stone walls, grand wooden table and ambient lighting sets the scene for a unique and insightful whiskey tasting experience.
Killeavy Castle Estate Owner, Mick Boyle says:
“Throughout the Estate’s development, ensuring that the stories of its inhabitants live through its current form is extremely important. We are excited to bring these new flavours to the whiskey industry and extend huge thanks to Shane, Annie and the team at Two Stacks, for their knowledge, support and collaborative passion in executing this project to the highest standard. Whether you’re a whiskey aficionado, or not, the storytelling, delightful food pairings and post-experience cocktail offerings in this space will be sure to offer something for everyone to enjoy and we can’t wait to welcome the first of our visitors to enjoy this truly unforgettable experience.”
The experience will include a tasting of two whiskeys and one Irish cream, expertly paired with food from the Estate’s farm.
Eimear Callaghan, Head of Experience and Industry Development at Tourism NI says:
“Tourism NI is committed to developing authentic experiences that encourage visitors to slow down and stay longer. Initiatives like the NI Spirit Trail & Distillery Passport celebrate our rich traditions of whiskey production and storytelling. Killeavy Castle Estate continues to enhance its visitor offering, and the launch of the Signature Whiskey Tasting Experience at The Corn Store is a fantastic addition to the Mournes, Gullion and Strangford region, an area fast becoming a must-visit destination on the island of Ireland. We’re delighted to see Killeavy Castle Estate expand its food and drink experiences with this unique collaboration, combining local produce and Irish whiskey in an immersive setting, underpinning their commitment to sustainability and local tourism partnerships”.
The first whiskey tasting experience will take place on Friday 25 July and Friday 29 August, priced at £35 per person. To book and find our more, click here.
